100g (31/2 oz) extra-thick cream
2 tsp Tea Box Earl Grey
1. Cut the chocolate into pieces that are as tiny as you can possibly make. Next place them in a bowl ready for the yummy hot cream to be poured on to them.
2. Heat the cream and the tea in a pan over a low heat to infuse the flavour. When the mixture starts to boil, remove from the heat and pour through a strainer on to the chocolate.
3. Now leave the mixture a couple of mins to ensure the chocolate has melted, then mix all together to form a silky consistency (or if you want to be extra posh it is called a ganache). Line a baking tray with a sheet of nonstick baking paper, then pour the ganache on to it. It is best to start in the middle and spread to mixture with a spatula. Try and get an even coverage of around 15mm thick.
4. Gently put the ganache into the fridge for a couple of hours or until it has set. Now - the fun bit! Use a heart shaped cutter to create your truffles.
